GREEN CHILE CHICKEN POSOLE

2 cups dried posole
9 cups water
1/2 lb. chicken, diced
1 small yellow onion, diced
2 large garlic cloves, minced
1/4 cup green chile, chopped
1/2 teaspoon cumin
1 teaspoon dried oregano
2 cups of chicken stock or broth

Place posole and water in a large heavy stock pot, cover and simmer until kernels pop and are tender, about 4 hours. Add more water as needed to keep posole covered. Add all remaining ingredients and simmer uncovered for 1 1/2 hours. Serve with warm flour tortillas. Makes 4 to 6 bowlfuls.
